Surprise Chocolate Pudding

Sweet Potato Chocolate Pudding 2 1

Ingredients

1 large sweet potato, about 1 lb.
6 tablespoon good quality cocoa powder
1/3 cup maple syrup
4 tablesppon coconut cream
1 tablesppon coconut oil
1 tablespoon chia seeds, ground (feel free to use a coffee grinder to grind the seeds)

Make it

Preheat oven to 400 degrees.

Scrub sweet potatoes, then poke several holes with a fork.

Place on a foil covered baking sheet and bake for 45-60 minutes* or until very soft.

Remove from oven and let cool.

Peel skin from sweet potato and put pulp into a medium bowl. Mash with a fork.

Add remaining ingredients and mix together with a wooden spoon or large scraper until smooth.

For smoother texture, you can use a food processor to do all the mixing.

Divide into individual small bowls and refrigerate, if desired, until cold.

Top with sliced strawberries before serving, if desired.
